About the Meat Evaluation & Technology CDE
In the Meats Evaluation and Technology CDE, students develop the skills needed for careers in the meat animal industry. During the event, members evaluate beef carcasses for quality and yield grade; identify various meat cuts and place carcasses, and identify wholesale and/or retail cuts.

Format
A chapter may judge four members, with the three highest scores counting as the team score. This contest is open to all California secondary schools having FFA programs where instruction in meat grading and evaluation is a part of the curriculum.
